Mexican food chain makes fresh start in Niles

Fresh. It’s more than just a word in the name of the restaurant — it’s what makes Baja Fresh unique, said Jignesh Patel, owner of the new restaurant that opened this week at 8610 W. Golf Road.

“We are unique,” Patel said of the casual Mexican chain, which has changed its decor and created a more customizable menu. “We are not pre-made. It’s all fresh, never frozen.”

The restaurant chain is known for its signature burritos and offers a variety of other items, as well. The menu allows diners to customize their meal. First, they can choose a Baja Fresh protein, such as fire-grilled chicken, shrimp or steak. Then, they are able to select a burrito, taco platter or salad with a variety of flavor and signature recipe styles.

Guests can also enjoy a salsa bar that features six signature salsas that are made every day. The restaurant makes guacamole daily, as well.

The restaurant held a grand opening Feb. 7 that was attended by Niles Mayor Robert Callero, Police Chief Dean Strzelecki and “Miss American Coed” Jasmine Guy. Members of the Niles Chamber of Commerce and other local business representatives also attended the grand opening.

“It’s a nice location,” Patel said, noting the proximity to Golf Mill Shopping Center and other businesses, and its highly visible location on Golf Road.

Patel said the new Baja Fresh restaurants now offer real silverware and dishes, and the staff waits on its customers. The decor now features new materials, such as stone and wood, and warm colors.

“It’s a totally new experience now,” Patel said.

The new stores also offer specialty bowls, such as Skinny Chicken Bowls, that include a smaller portion of protein and more vegetables.

Owning a franchise is not a new concept for Patel.

He has owned a sandwich franchise in Mount Prospect for five years and will continue to own both eateries.

“I just like the menu and the concept of the fresh food,” Patel said of why he thought Baja Fresh would be a good fit for him.

There was previously a Baja Fresh on Touhy Avenue in Niles.
